I am using PSE5. Is it possible to make a DVD containing a few slideshows such that when the DVD is entered one is given the option of which slideshow to select for viewing? Much like what I see on commercial DVD's.

None of the Photoshop Elements versions (4, 5, 6, 7 and 8) allow you to burn your slideshow to a DVD for viewing on the TV DVD player. You need an additional program such as Premiere Elements to create menus and generate the slideshow in DVD-VIDEO format on a DVD disc (the version playable on the TV DVD player).

You may have misunderstood the presence of "DVD with menus" in other options in the Organizer/Create. That feature will write a bunch of .wmv version of a slideshow and/or saved slideshows to a .wmv file and then send the project over to Premiere Elements for the menu creation and generation of the DVD-VIDEO.

You could take the .wmv version of your Photoshop Elements 5 slideshow and import it into a program such as Nero (Nero Vision application with DVD-VIDEO plug in) and add menus and create DVD-VIDEO there.
