Forgive my ignorance, but could someone explain what channel mixer is and how and why it's used?

Hi Barry ...
The Channel mixer provides a method of taking the information that is held in each of the colour channels (Rad, Green, Blue) and allows you to change it by mixing it with information from one of the other colour channels.
Its not easy to explain ... its far easier to just load it and move the controls around :)

As you will see it really can be used for a wide variety of things :)

It took me a while to find that one ... Channel Mixer does all sorts of things but 99% of the tutorial and turning colour to B&W.
I have bookmarked the site as it looked quite good .. :)

This one third tutorial alone is worth to install Grant's tool! If you have an eye for snow, go try it now!
(I'm gonna get sick in the living room waiting for you all to return.. creating synthetic snow... lol!)
