Selecting "print" for a photo in full edit, the screen provides a number of printer profile options for my Canon Printer as follows:

(All Canon MX860)
Series GL2/SG2
Series GL3/SG3
Series MP 2
Series PR1
Series PR2
Series PR3
Series PT2
Series PT3

What are these for? I have color handling set on "Photoshop Elements Manages Color."

Does it matter what the printer profile is set on? If so, how do I know which one to choose?

Those are Canon paper profiles. You should choose according to the paper you are using:

GL2/SG2 = Photo Paper Plus Glossy II or Photo Paper Plus Semi-gloss quality setting 2
GL3/SG3 = Photo Paper Plus Glossy II or Photo Paper Plus Semi-gloss quality setting 3
MP2 = Matte Photo Paper quality setting 2
PR1 = Photo Paper Pro II quality setting 1
PR2 = Photo Paper Pro II quality setting 2
PR3 = Photo Paper Pro II quality setting 3
PT2 = Photo Paper Platinum quality setting 2
PT3 = Photo Paper Platinum quality setting 3

I do not have any information about the quality settings. You could try Googling for that.
