Again, I'm still learning here. I know I can use the "z" to zoom but what do I use to zoom out?

"Z" is used to select the Zoom Tool.

To Zoom IN: Ctrl "+"
To Zoom OUT: Ctrl "-"

Hi, there is alway more than one way to do things in Elements.
Holding Alt will change a zoom plus to a temporary minus.

And if you are making a selection and need to change the zoom

Hold Ctrl and the Spacebar it will get you a temporary zoom.
Then you can continue with your selection.
Ctrl + Alt + Spacebar gets a minus zoom.

I find these helpful because I don't have to stop the selection.

You can quickly zoom in to 100% view by double-clicking the zoom tool.

You can quickly return to full-screen view by double-clicking the hand tool.
