I'm trying to do a face replacement; after I've replaced a face onto a new image and created a new layer (selecting blending mode as "color"), I selected the proper spot to click with the eyedropper tool. When I go to then use the brush, it brushes a much lighter tone of the color I want, and sometimes a completely different color.

I'm not familiar with many of the deeper aspects of PS, so if anyone knows what I may be doing wrong, I would appreciate some assistance.

Check the type of sample size the eye-dropper has set in the options bar. If it's set to Point Sample, it will pick the colour of the pixel underneath the cursor. Use 3x3 or 5x5 averages as this takes a larger area into account and you'll get a better colour match.
