Are you using Photoshop or Photoshop Elements? Which version of either are you using?
We will need this info to help you with your quest :D

Installing them is possible, but will slow down PSE start-up. I just keep them in a brushes file and from the brushes menu click on the double > below the white x and select load brushes. Navigate to the file and you can use them and close when done.

I'm trying to create brushes from Illustrator files. When I go to Edit>Define brushes from selection is grayed out. Can anyone tell me how to make this active?

First you have to select with one of the selection tools. If you want whole pic use select all. If have a transparent background use the magic wand on that and inverse the selection.

There is a limit on how large an image can be when you make a brush.
Try making the image smaller and see if that works.

Edit: searched; can't find it now. The limit is 2000 and some. Definitely less than 3000px wide.
2nd Edit: the limit is 2500px If too large the "define brush is grayed out"
