When I try to convert and save a Raw file with PSE6 on my Imac -, I don't have the possibility to select the Jpeg format.
I have only the Jepg 2000 format !
Can you help me ?

I think all of us using RAW have run into that :). You need to convert to 8 bit (It's under Image>Mode) and then JPEG will become an option. JPEG only supports 8 bit while JPEG2000 supports both 8 and 16 bit which is why it shows as an option. You'll see a lot more saving options once you convert.

Thanks for the information, I am not using a MAC, however, mode is not a selectable item under image from the organizer. By opening the full editor I then have the screen with all the slides and no menu items at the top. So I am getting hung up here on getting from one step to the next. All I want to do is a simple convert of selected RAW images to JPEG. Please let me know what I am doing wrong here in not seeing this process.

It sounds like you are still in ACR. When you open a RAW file in Organizer the ACR window opens. You must process the RAW before converting to jpg. See PSE help "To open and process camera raw files"

If you wish to convert directly from the Organizer use File > Export

See this link for an annotated screen shot of the ACR window in PSE 5:-
