The curves that you get with the addons doesn't have the individual channels (so simply ignore the first part and move on to where he uses the photograph) this should give you some idea of how to use curves ...

Its old so it looks different but Page 2 shows you basic info about Colour Balance and Page 3 shows how to use Curves.
