My father has Alzheimer's Disease. He in in the later stages of the disease. I would like to put together a quick little book of photos and text that outline his life. My 8 year old son and niece, both complain of not knowing what Grandpa was like when he was younger. I really don't have alot of time, because I also help take care of him. I was thinking about purchasing Photoshop Elements and was planning to scan some photos of him from his child hood.
Does anyone know of any templates that I might be able to download for Photoshop of publications that would already be set up so I could plug in some text and photos? I want to print something nice for the kids, but I just don't have alot of time to spend setting something up from scratch. Any advice would be helpful.

Probably the best way would be to purchase some Quick Pages ... they are relatively inexpensive and you just add a photo.photos and text to them.
You can get them from most scrapbooking sites including the one where I have a DDD Gallery :)

PSE is definitely a good choice for digital scrapbooking. If you're planning on a "fancy" book, I would encourage you to do a little bit of research about photo book options and decide what size you want to "scrap". A lot of people create their layouts as 12x12 documents but print as 8x8. I also know quite a few that scrap in a size that's easier to print at home, like 8.5x11. They then place the prints in a binder eliminating the need to send it to an online printer. Lots of flexibility with this type of book to add pages or reprint layouts.
There's TONS of templates available on the internet. If you decide to scrap in a non-traditional size you might want to make sure the templates are easy to resize.

Wendy is right about the quickpages but have you worked with Photo Editing software before if not I would suggest you scan your photos and go web http://www.shutterfly.com/shop/product_c18530/A_Tribute_designed_by_Anna_Aspnes or others( I mentioned them because I saw one finished). They have albums that you can upload your pictures too and even journal on the pages. Does your photos require some work on them?
Now I am only suggesting this if you feel you don't have time but if you want to invest in PSE ,and I encourage you to do so ,you will not regret it but there is a learning curve. If you join with a subscription you will be able to access many videos and tutorials that will speed your learning process.
