How do you get rid of the white background when you use the panoramic photomerge?

I guess by white background you mean the extra canvas that has been added to give space to work in. You need to select the crop tool and crop your image and remove it once the photomerge is done ..... you also may need to use the clone tool to fill in the parts that its not possible to crop out.

or do you mean the actual photomerge window where you do your photomerging work ? At this point I have not found a way to change that.
