How can I limit 5.0 to save and/or display only the basic EXIF information as per this screen shot?

OR, simply block it altogether?

If you use >File >Save for Web, all EXIF data will be stripped.

...will that further compress the file?
Also, is this a complete block or will the 'brief' EXIF still show?

It DOES block all EXIF which is plan B.
Plan A remains brief EXIF only to be able to show original pic date and camera model where that info is required for entry into certain POTD competitions.
So, still curious if this limited display is possible with 5.0.

The EXIF data are either there or not... Display? When and where is the displaying taking place? In Elements? Some other application?

.. in any web post e.g. with a right click in Firefox with the EXIF Viewer add on. The reason for my asking is I've seen some web EXIF displays exactly like the screen shot link I posted above which I'm still hoping might be doable with 5.0.

The data in your screen shot seem to be IFD (Image File Directory) data, contained in TIFF files. I have no clue when and how they are displayed. Anyway, I don't think there is any way to duplicate that kind of data set for JPEGs with PSE5.
