I have two photos that are 8X10, but I want to print them as 5x7 (5 wide and 7 tall). Any suggestions on how or if I can do that?

I would just try the crop tool. Set the dimentions that you need the finished photo to be and drag over the photo and crop. You will lose some of the original photo becaue they are not the same ratio but you will be able to get pretty close. or you can do Image<resize> image size and try the new dimensions there and see if you like that but you will get a distorted picture.
