I did my daughters hand and foot prints the other day and scanned them but I did the one set on grey paper instead of white. Any idea how I am crop out just the prints and paste them onto a white background?

Princess4Life: One simple way that may work for you:
Open image with gray background
Use Magic Wand tool to select the gray.
With selection active, do an Edit>Fill Layer using white.If that doesn't work well, you may need to select the area you want to keep and copy it to its own layer to work further; but see whether the simple approach works for you.

Is there an easy way to select just the grey. It seems to be always picking up the footprint as well. Very picky!!! :)

You may have to reduce the tolerance (sensitivity) of the magic wand tool. I think it defaults to 32; try 10 or 15 and see if that does a better job. You can also set the Magic Wand tool to "Add to Selection" mode, and with low tolerance, click on several areas until you have everything selected except the footprints.
