I want to insert a portion of a colour photograph of a forest into a larger b&W photograph of a forest from a distance.
1) I seem to loose the original colour
2) sizing I have now figured out
3) I want the edges to be smoother.
I am very new to Photoshop and don't know the vocabulary.

If you wish to keep the colour then you need to change the mode of the B&W image to RGB ... to do that do Image>Mode>RGB.
Once you have moved your colour image into the B&W one you will be able to resize it by clicking on the move tool. Next click on the colour image and you will now see a bounding box around it ... click on the corner of the box and you will then be able to resize it.

If you want to smooth out the edges take a look at this thread:

Received your message and sorry it didn't work for you.
You want to smooth the edges of a portion of the image that you have already cut out .. so try this:
Open up the layers palette and click on the layer that has the portion you want to smooth on it ... the paintbrush should show on the left hand side.
Hold down the Control Key and click on the layer again. Look at the image itself and you will see the portion is outlined by the "marching ants" ( a dotted line). Now do Select>Modify>Smooth ... you may have to increase the number of pixels depending on the resolution of your image.
Now do Select>Inverse then Edit>Clear
Hope that works OK
