Which online courses are Elements 5.0 specific?

The courses are designed to work with elements versions 3, 4, and 5 so they are good for 5; just won't see much of the features of 5 being used.

I haven't taken it, but isn't Corey's latest one done using PSE5?

It is but 95% is the same for previous versions. I think for any of the courses it really doesn't matter which version you have. Although there have been changes to the look and feel and a few more features added the basic principles that the courses cover stay the same.
